Simple, satisfying, and easy to prepare, this yogurt parfait combines creamy Greek yogurt with homemade granola, fresh fruit, and honey. Ideal for breakfast or a light snack, it brings together a variety of textures and flavours while keeping things uncomplicated.
Ingredients
For the Granola
- 6 cups rolled oats
- 2 cups sliced almonds
- 1 cup shredded coconut
- 1 cup roasted and salted sunflower seeds
- 1 tbsp flaxseed (or more, if preferred)
- 1/2 cup coconut oil, melted
- 1 cup honey
For the Parfait
- Greek yogurt
- Strawberries, sliced
- Dark chocolate, finely chopped (optional)
Method
- In a large bowl, combine the oats, almonds, coconut, sunflower seeds, and flaxseed.
- In a separate bowl, mix the melted coconut oil with the honey. Pour the mixture over the dry ingredients and stir until evenly coated.
- Spread the mixture onto a baking tray in an even layer.
- Bake at 165°C (325°F) for about 15 minutes. Stir and continue baking for another 10ā15 minutes, or until the granola is golden brown.
- Allow the granola to cool completely before storing it in an airtight container.
- To assemble the parfait, spoon a layer of Greek yogurt into a glass or bowl. Add a layer of granola, followed by strawberries and, if desired, a little chopped dark chocolate. Repeat the layers and serve.
